What shall I do with my over ripe BANANAS?

Here are 2 options:

Best Banana Bread (Michele Garvin)

3-4 bananas; 2 eggs; 1 cup sugar; ½ c. shortening
1 c. flour; ¼ t. salt; 1 t. soda;½ t. baking powder;1 T. sour milk (2 t. reg. milk/1 t. vinegar)

Cream 1st paragraph – shortening, sugar and eggs. Add bananas and sour milk.Add 2nd paragraph – dry ingredients. Spray Pam in pans and Bake at 350 for 1 hour.


Banana Cake (Tracie Callihan)

3 cups white flour
1 cup whole wheat flour
2 cups sugar
1 TB baking soda
1 teas salt
2/3 cup veg. oil
6 ripe bananas mashed
1 3/4 cup water
2 teas vanilla

Oven: 350 degrees F Bake 30 -35 min or until done. Mix all dry ingredients together in large bowl. Blend well. Then add oil, bananas, water and vanilla. Mix together throughly. Place in greased 13 x 9 inch pan. Bake. Cool. Enjoy! This should help use up bananas. I also use this recipe to make muffins just cutting the time to 16 min and placing the batter in muffin tins.
