Great Question! Someone asked this yesterday and here is the answer:
"Dry Pack" Canning is where you take bulk food items such as wheat, rice, oats, beans and put them in #10 metal CANS. You put in an oxygen pack on the top, put the metal lid on and then seal it with a special "electric canner" that we have.
"Water-Bath" Canning is where you place FRESH fruit, vegetables or meat in JARS and cook them for a certain period of time in a pot filled with water, or a steam-canner, or pressure cooker.
